Some of us went to visit a knitting friend in Carbondale and this was the soup she prepared for us for the weekend.

1 Onion, diced
1 tbsp Olive Oil
2 - 28 oz cans Italian Seasoned Whole Tomatoes (I used 3 14 oz cans of Italian diced Tomatoes and 2 cans 14 oz Tomato Sauce
1 Bag Fiesta Vegetables (Kroger product?) I used a mix of corn, peppers, broccoli and beans. I added a can of carrots and mushrooms.
1 can beef broth
2 cups water
1/2 tsp basil
2 c cheese tortellini (I use an entire small bag of frozen)
2 gloves of garlic
Oregano to taste
Parmesan cheese to top.
In large Dutch Oven, saute onion and garlic in Olive Oil. Broil or brown sausage and slice. Add water, broth, seasonings, tomatoes and sausage to pan. Let simmer for about 1 hour. Then add frozen veggies and tortellini and cook until both are tender. Top with Parmesan cheese to taste. Makes a whole heaping helping! I am not kidding, my pan was about to overflow!
